Η Ευρυδίκη Ζαχοπούλου έχει πολυετή διδακτική εμπειρία σε προγράμματα μεταπτυχιακών σπουδών διαφόρων ιδρυμάτων και σε προγράμματα προπτυχιακών σπουδών. Έχει δημοσιεύσει περισσότερα από 65 άρθρα σε διεθνή επιστημονικά περιοδικά και έχει περισσότερες από 120 παρουσιάσεις σε Παγκόσμια και Διεθνή Συνέδρια. Η ποιότητα του ερευνητικού έργου της μπορεί να υποστηριχτεί από τις ετεροαναφορές του έργου της, οι οποίες ξεπερνούν τις 2.000, ενώ ο δείκτης h-index είναι 22. Έχει δημοσιεύσει δύο βιβλία σε εκδοτικούς οίκους παγκοσμίου φήμης (Human Kinetics – USA, Palgrave Macmillan – UK), και πέντε κεφάλαια σε συλλογικούς τόμους.
Από το 2000, έχει συντονίσει, υποστηρίξει και συμμετάσχει σε χρηματοδοτούμενα ερευνητικά προγράμματα με προϋπολογισμό συνολικού ύψους πάνω από 6.000.000€. Έχει διοργανώσει επιμορφωτικά σεμινάρια και ημερίδες για παιδαγωγούς προσχολικής ηλικίας σε πολλές Ευρωπαϊκές χώρες και προσκληθεί ως ομιλήτρια σε
πολλά Διεθνή Συνέδρια. Επίσης, είναι μέλος της Συντακτικής Επιτροπής επιστημονικών περιοδικών, και μέλος της Οργανωτικής Επιτροπής Διεθνών και
Ευρωπαϊκών Συνεδρίων.
